One Pot Yellow Chickpea Cauliflower Curry

This recipe is adapted by Dana at The Minimalist Baker! If you are not already following The Minimalist Baker on Insta for some delicious recipes, you should be!

This recipe is absolutely delicious, healthy and filling. You can alter the spice for your pleasing so if you like things spicy, you can add some chilli powder or fresh chillies. This is a great vegan recipe to cook for the family on a cold winter night, or turn it into a summer feast with a side salad - it's quite versatile really.

CURRYOne Pot Yellow Cauliflower Curry

  • 2 Tbsp water (or coconut oil)
  • 1/3 cup shallot (chopped)
  • 4 cloves garlic
  • 2 Tbsp fresh ginger 
  • 1 small serrano pepper
  • 3-4 Tbsp red or yellow curry paste
  • 2 cups light coconut can 
  • 1 tsp ground turmeric
  • 1 Tbsp maple syrup
  • 2 Tbsp coconut aminos 
  • 1 cup cauliflower (chopped)
  • 1 1/4 cup cooked chickpeas
